Blackcurrant Leaf, Lemon, Gin
A stirred gin cocktail built on blackcurrant leaf and morello cherry, topped with a lemon foam. Clean, sharp and deeply coloured.

Ingredients
For the Cocktail
40ml Blackcurrant leaf gin
15ml Morello cherry liqueur
25ml Lemon and chervil water
Lemon foam, to top
Blackcurrant Leaf Gin
250ml Gin, your preference
5 Large Blackcurrant leaves
Lemon and Chervil Water
5 Chervil sprigs
2 Strips of lemon peel
500ml Filtered water
Lemon Foam
150ml Lemon juice
150ml 1:1 sugar syrup
1g Xanthan gum
Preparation
Combine the blackcurrant leaf gin, morello cherry and lemon and chervil water in a mixing glass. Stir over ice until well chilled and diluted. Strain into a Nick and Nora glass. Top carefully with lemon foam using a siphon to build a clean, flush top on the drink.
Blackcurrant Leaf Gin
Combine 250ml gin with 5 large blackcurrant leaves in a heatproof container, making sure to tear the leaves slightly first. Bain marie for 1 hour at a gentle simmer, or seal in a zip-lock bag and submerge in hot water from the tap, topping it up every 15 minutes to maintain the temperature. Strain and cool before using.
Lemon and Chervil Water
Place 2 strips of lemon peel and 5 chervil sprigs in 500ml of water. Bain marie for 30 minutes. Again, if you don't have a bain marie just follow the step above. Strain and cool. Can be made ahead and refrigerated for up to 3 days.
Lemon Foam
Combine 150ml fresh lemon juice, 150ml sugar syrup and 1g xanthan gum. Blend briefly to incorporate the xanthan. Pour into a siphon and charge with 2 N2O canisters. Allow to rest in the fridge for 20 minutes. Shake well before each use.
