Chamomile, Rosemary, Elderflower
Chamomile, elderflower, and rosemary. Soft, floral, and low-alcohol. Chamomile is usually treated as something secondary, more often found in tea than used as a central ingredient. Here, it forms the base of the drink.

Ingredients
For the Cocktail:
20ml St-Germain
40ml rosemary-infused vermouth
30ml chamomile reduction
30ml fresh lemon juice
30ml aquafaba or egg white
Chamomile reduction:
2 chamomile tea bags
100ml filtered water
50g caster sugar
Rosemary vermouth:
100ml vermouth
1 sprig rosemary
Preparation
Add the rosemary to the vermouth in a sealed container and leave to infuse at room temperature for 4–6 hours. Taste periodically to avoid overpowering the vermouth, then strain before use.
Prepare a strong chamomile tea and combine with sugar in a saucepan in equal parts. Gently heat, stirring until the sugar is fully dissolved, then allow to cool before use.
Add all ingredients to a shaker without ice and shake to aerate.
Add ice and shake again until well chilled, then fine strain into a highball glass over cubed ice.
Allow the foam to settle slightly, then garnish with a rosemary sprig and seasonal edible flowers. Serve immediately.
