Red Love Apple, Earl Grey, Gin
A bright, lightly floral highball built around Red Love apples, layered with Earl Grey and rose, and finished with a soft, citrus foam.

Ingredients
For the Cocktail
50ml Red Love apple gin
25ml Earl Grey & rose–infused Red Love apple juice
15ml fresh lemon juice
15ml simple syrup
30ml aquafaba
100ml Red Love apple juice, to top
Earl Grey Infusion
175ml Red Love apple juice
15g Earl Grey tea
Preparation
For the cordial, combine the elderflower and cucumber cordial with water and a generous handful of sweet cicely in a vacuum bag. Seal and place in a bain-marie for 45 minutes, then strain and chill.
Add all ingredients except the apple juice to a shaker and dry shake to build texture. Add ice and shake again until well chilled, then fine strain into a highball glass over fresh ice.
Top with the Red Love apple juice.
Garnish with a fan of three thin slices of red apple on a skewer, resting across the glass.
