Lime Leaf, Lemon Balm, Tequila

Lime leaf sits somewhere between citrus and herb. It doesn't contribute juice or acidity in the way a lime does, but rather a clean, aromatic quality that lifts whatever it is paired with. Infused into tequila, it carries that character into the base of the drink without overwhelming it. The drink is green in both colour and character. Garden-forward, aromatic, and structured by acid rather than sweetness.

Ingredients

For the Cocktail

35ml Lime Leaf Infused Tequila

20ml Lemon Balm and Agave Cordial

15ml Fresh Lime Juice

2 Mint Leaves

3 Sorrel Leaves


Lime Leaf Tequila

200ml Tequila

5 Lime leaves, ripped


Lemon Balm and Agave Cordial

Makes approximately 500ml

250ml Filtered water

130g Caster sugar

100ml Agave syrup

3 Fresh lemon balm sprigs

10 Fresh sorrel leaves

3g Citric acid

3g Tartaric acid

3g Malic acid

2g Maldon sea salt


Garnish

Fresh mint sprig

Lemon twist

Absinthe wash

Preparation

Rinse a glass mug with absinthe, discard the excess and set aside. Add all remaining ingredients to a shaker with cubed ice and shake hard. Double strain into the prepared mug over fresh cubed ice. Top with crushed ice and garnish with a mint sprig and lemon twist. Serve with a straw.


Lime Leaf Tequila

Place both ingredients into a vacuum pack bag and seal. Cook in a bain-marie at 68°C for 45 minutes. Remove, strain out the lime leaves and store refrigerated.


No vacuum pack? Combine the tequila and lime leaves in a sealed jar and leave to infuse at room temperature for 24 hours. Strain before using. The result is slightly less vivid but no less delicious.


Lemon Balm and Agave Cordial

Bring the filtered water to a gentle simmer. Add the lemon balm and sorrel, stir gently, then remove from heat. Cover and infuse for 30 to 45 minutes at room temperature until the colour and flavour have fully extracted.


Strain through a fine mesh sieve into a clean pan, pressing the leaves gently to extract all flavour. Add the sugar and agave syrup to the strained liquid and warm gently, stirring until fully dissolved. Do not boil.


Remove from heat and allow to cool to around 40 to 50°C. Stir in the citric acid, tartaric acid, malic acid and sea salt until completely dissolved. Allow to cool fully before bottling.
