Sweet Cicely, Elderflower, Vodka
This highball leans into the soft, aromatic side of garden ingredients: sweet pea, cucumber, and elderflower. Balanced with gentle acidity from verjus and lemon. The result is light, precise, and built for warm afternoons, but structured enough to hold its place on a serious menu.

Ingredients
For the Cocktail
50ml pea pod vodka
50ml elderflower, cucumber & sweet cicely cordial
15ml verjus
10ml fresh lemon juice
3 drops Ceylon sour bitters
Soda water, to top
Garnish
Cucumber ribbon
Sweet cicely sprig
Fresh raspberry
Preparation
Add all ingredients except the soda to a shaker and shake briefly to chill and integrate.
Strain into a highball glass over fresh cubed ice and top with soda water, lifting gently to combine.
Garnish with a cucumber ribbon and a sprig of sweet cicely.
